A Well-Deserved Martini Departure: Mojitos!

This could be my greatest creation yet - if I do say so myself. And, I do.

Mojito
2 Tbsp roughly chopped mint leaves
1.5 Tbsp fresh lime juice (1/4 lime)
2 Tbsp sugar (or Splenda for us Low Carbers)
1.5 ounce white rum (overflow of a martini top)
1/3 martini top vanilla syrup (non sugared or sugared)
Soda water

Use back of wooden spoon to muddle the mint in the bottom of a 10 oz glass.
Add the lime juice, vanilla (which you can get in the coffee isle of supermarkets) and sugar; stir until dissolved. Add rum, the fill glass with soda water and crushed ice.

Special thanks to my good friend, Susan, for giving me the mint plants last year that made this drink possible. Even I couldn't kill them.

Anyone have her own recipe(s) to share? (I'm talkin' alcohol, of course.)

After drinking this one, I got the inspiration (why do I always have my best inspirations after imbibing) to sub strawberry/raspberry syrup for vanilla. Stay tuned...
